Citrus Muffins

You will need:

-1 citrus fruit (Approx 140g)
-Poppy seeds (Optional)
-3 eggs
-180g butter (Melted)
-1/2 cup sugar
-1 1/4 cup self raising flour
-A food processor

Method:

1. Set oven to 180˚c.
2. Peel the skin off of the fruit and discard. (Optional)
3. Cut the remaining fruit and remove any seeds.
4. Put all the ingredients into a food processor and mix until there are no lumps.
5. Spoon into muffin molds.
6.  Bake until golden brown and slightly firm to the touch. (Approx 15 mins)
