Banana Bread

What do you do when you have frozen bananas that you don't know what to do with? Make some banana bread!

1 3/4c all-purpose flour
2/3c sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1c mashed ripe banana (2-3 medium sized bananas)
1/3c shortening, margarine or butter
2 Tblsp milk
2 eggs
1/3c chopped nuts
1/4c chocolate chips (optional)

In a large mixer bowl combine 1 cup of the flour, the sugar, baking powder, baking soda and salt. Add mashed banana (If using frozen banana, put in microwave for 2 mins, then mash it), shortening/margarine/butter and milk. Beat with an electric mixer on low speed until blended, then on high speed for 2 mins. Add eggs and remaining flour. Beat until blended. Stir in nuts and chocolate chips. Pour batter into a greased 8x4x2 inch loaf pan. Bake in a 175˚c oven for 55-60 mins or until a toothpick inserted near the center comes out clean. Cool for 10 mins on a wire rack. Remove from pan and cool thoroughly on a wire rack.
