Candy

Here is a great recipe that makes tasty treats:

Ingredients:
1 cup of sugar.
1/4 a cup of water.
Food coloring.
Flavoring. (An essence works really well.)
Citric acid.
A mold. (Ice cube molds are the best.)
A candy thermometer.
A medium sized saucepan.

Method:

1. Attach the candy thermometer to the saucepan.
2. Add the water and the sugar to the saucepan.
3. Gently dissolve the sugar in the water.
4. When the mixture is dissolved, increase the heat on the stove until the mixture is boiling. (The candy should boil evenly all over the surface - do not simmer)
5. When the mixture reaches about 140˚c, add the colour and flavor.
6. Continue boiling until the mixture reaches 150˚c.
7. Then remove the saucepan from the heat and pour it into a heatproof jug. (We recommend warming the jug first so that the candy doesn't stick to it)
8. Add a pinch of citric acid, then allow the bubbles to subside.
9. Pour the candy into the molds and leave it to set. (Approximately 5 mins depending on size of mold)
