This is a quick and easy chocolate muffin recipe.
Good for freezing and putting in lunch boxes.
Makes around 22 muffins.
You Will Need:
-2 1/2 cups flour
-2 cups sugar
-1/4-1/2 cup cocoa powder
-2 tsp baking soda
-1 tsp salt
-2 tsp vanilla essence
-1/2 cup vegetable oil or melted butter (125g)
-2 Tbsp white wine vinegar
-2 cups warm water
-Muffin tins
Method:
1. Heat oven to 180˚c.
2. Sift all dry ingredients into a bowl.
3. Add the wet ingredients to the bowl.
4. Whisk together until smooth.
5. Pour into greased muffin tins.
6. Bake for 20-25 mins.
